Why does the temperature of my Audi 80 fluctuate after driving for a few minutes?

I've noticed that after driving for a few minutes, the temperature gauge on my Audi 80 starts to fluctuate between hot and normal. It doesn't seem to be causing any performance issues, but I'm worried it may be a sign of a larger problem. Any insight would be appreciated.
